Pumpkin Chocolate Oat Cookies

INGREDIENTS:

  • 2 cups almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon cinnamon
  • 1 cup pumpkin purée
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1 1/2 cup oats
  • 1 cup dark chocolate chips

DIRECTIONS:

  1. Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
     
  2. In a medium bowl, mix the dry ingredients (almond flour through cinnamon) together and set aside. In another medium bowl, combine the wet ingredients (pumpkin through maple syrup). Mix the wet ingredients into the dry. Once combined, fold in the oats and dark chocolate chips.
  3. Scoop out cookies onto the lined baking sheet and place in the oven for 16-18 minutes.
