Oatmeal Cookie Dough Nice Cream

Let’s talk about nice cream for a minute.

Healthy, dairy-free “ice cream” made entirely from frozen bananas. Skeptical? Ya, me too. Cuz it’s sketch-yyy. Listen, if anyone tries to tell you that “frozen bananas taste exactly like ice cream!”, friend...RUN. Run far far away and never look back, because frozen bananas taste exactly like frozen bananas. The end.

But frozen bananas, almond butter, oats, dates, a pinch of cinnamon, and a splash of vanilla? That? Well that tastes exactly like oatmeal cookie dough ice cream. (Okay fine, oatmeal cookie dough with the teensiest hint of banana. You can’t have it all. But you can have this and I’m telling you, it’s AMAZING.)

Why nice cream?

Ice cream is delicious. It’s also a lot of processed sugar and dairy and too much can be no bueno for your bod. Nice cream (aka frozen bananas and some mix-ins) is a great alternative because it’s naturally sweet, creamy, and freezes really well without getting too hard. Bananas are packed with great health benefits like:

  • Potassium to increase muscle and lower blood pressure

  • Fiber to improve digestion and promote weight loss and

  • Antioxidants to protect your heart health

Basically, nice cream is sweet, it’s creamy, and it’s good for you.

So it’s free calories.

So what you're saying is the calories don't count? No. (I mean yes, eat whatever you want.) But it’s still a treat. A treat is a treat. Nice cream is still sugar. It’s made of a better-for-you, slower-to-digest, keeps-you-fuller-longer, no-chemicals-or-processing-required sugar, but it’s still suga.

So next time you sit down to eat a pint of “nice” cream, remember you’re about to crush 6 bananas (which p.s. is a lot) plus whatever else you put in there. So don’t go crazy. Or do.

My suggestion? For those times you *really* really really need ice cream and you need it *right now*, go for the real thing. Otherwise, nice cream is an amazing guilt-free treat you can have on a weekly rotation. Daily rotation. Hourly rotation. Nope you’re right, too far. Twice a day max.

How to make it

  1. Peel and slice 4-5 ripe bananas.

  2. Freeze overnight.

  3. Blend with any flavor combination you like.

  4. Freeze again.

  5. Let stand 10 minutes before scooping. Dig in.

So that's the basic gist, but again– frozen bananas DOES NOT an ice cream make. But with just a few more simple, fresh ingredients YOU GUYS, it's so good.

What You'll Need:

  • 10 pitted dates
  • ¼ cup maple syrup
  • 6 frozen bananas
  • 1/4 cup almond butter
  • 1/3 cup quick oats
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • Splash of almond milk

Then Do This:

Blend all ingredients in high-speed blender (hiii Vitamix!) until smooth. Transfer to parchment-lined bowl or pan and freeze overnight or until firm. Bonus points: scoop nice cream between two oatmeal cookies and roll edges in mini chocolate chips. #winning

But it gets better.

This recipe is dreamy. The dates and almond butter make it double-y creamy (I know double-y isn’t a word but double doesn’t do the creaminess justice and triple is TOO FAR so just go with it, k?) and extra sweet. Like actual ice cream sweet, none of this “vegan dessert” crap that tastes like dirt. It’s sweet. Like ice cream. And creamy, like ice cream. And so so smooth.

But what am I even talking about?! What I was trying to say (before you distracted me on that “on a scale of 1 to creamy” tangent) is– there’s lots of OTHER ways to do nice cream that aren’t *this*.

And since summer is only just beginning and I scream, you scream we all scream...nope can’t do it. But you get me. WE’RE DOING A SERIES. A whole series on nice creams that actually taste like ice cream. [insert all the emojis here]

@leanne_mae7: Yum! My fave combo is mint chocolate! You could try bananas, a teensy splash of mint extract, handful of frozen spinach for the pretty green colour, a few dark chocolate chips or chopped from a square, a couple TBS of coconut milk, and some dates for sweetness! 🍃😋
