Coconut curry kale salad

COCONUT CURRY KALE SALAD 🌱


To make the salad:⠀

Ingredients:

1 tbsp chopped cilantro⠀
1/8 chopped Serrano chili⠀
3 each thinly sliced mini bell peppers⠀
1 tbsp hemp seeds⠀
1/4 c raisins⠀
1/4 c carrots, shredded
1 head kale, shredded⠀
2 1/2 tbsp rice wine vinegar⠀
1 3/4 tsp salt⠀
1 tbsp olive oil⠀

Instructions:⠀

Massage oil, salt and vinegar in kale until wilted. toss in remaining ingredients.⠀

To make the vinaigrette:

Ingredients:

1 tbsp masaman curry paste (we recommend maesri brand)⠀
1 tsp melted palm sugar⠀
2 tsp crushed peanuts⠀
1 tsp rice wine vinegar⠀
squeeze of lime juice⠀
1/4 c avocado oil⠀

Instructions:⠀

Blend all ingredients, toss in salad and enjoy! 🌿⠀
